1 1/2 cups water 1 1/3 cups uncooked couscous 1/2 tsp salt, divided 1/2 tsp freshly ground black pepper 2 Tbsp olive oil, divided 1 1/2 lbs medium shrimp, peeled and deveined 1 cup grape tomatoes, halved 1/2 cup green onions, thinly sliced 1/4 cup Greek-style nonfat plain yogurt
1. Bring water to a boil in a large saucepan over medium-high heat. Add couscous, ¼ tsp salt, and pepper to pan. 2. Cover, remove from heat, and let stand 5 minutes. Fluff with a fork. 3. Heat a large skillet over medium-high heat. Add 1 Tbsp olive oil to pan and swirl to coat. 4. Sprinkle shrimp with remaining salt. Add shrimp to pan, and sauté for 3 minutes or until done. 5. Combine with couscous mixture. 6. Toss remaining oil, tomatoes, and onions in a large bowl with couscous. Serve with tzatziki.
