Broccoli Omelet Bake

1 Serving, Counts as: 3 Life Protein, 2 Life Carbs, 7 Life Fats 

2 eggs
1/2 cup cooked broccoli, chopped
1 tsp dried onion
1-ounce reduced-fat cheddar or Swiss cheese, divided
2 Tbsp skim milk
1/4 tsp salt
1/4 tsp garlic powder
1 tomato, sliced

1. Beat eggs until light and fluffy.
2. Stir in broccoli, onion, half of the cheese, milk, no salt, basil, and garlic powder.
3. Pour into ungreased baking dish.
4. Arrange tomato slices on top; sprinkle with remaining cheese.
5. Bake uncovered, in a 350-degree oven for 20-25 minutes.
