Carrot Salad

1 Serving, Counts as: 3 Life Carbs 

1/2 medium carrot, shredded
1 rib celery, thinly sliced
1 tsp lemon zest 
1 tsp lemon juice
1/2 tsp sugar twin brown sugar
2 tbsp raisins
Dash of ground ginger 

1. Mix all ingredients together in a small bowl. 
2. Cover and chill for at least 1 hour before serving.
