Ingredients 2 Tbsp minced green onion 2 Tbsp light margarine 3 Tbsp flour 3 cups Herb-Ox low sodium beef broth 2 cups skim milk 3/4 cup grated light or reduced-fat cheddar cheese 1/4 cup grated light or reduced-fat cheddar cheese 1/4 tsp fresh ground pepper Paprika and parsley to garnish
Directions 1. Sauté the onion in butter until softened; add flour and blend. 2. Gradually stir in the broth and add the milk 3. Bring to a boil and add cheese and pepper. 4. Simmer until cheese is melted. 5. Sprinkle with paprika and chopped parsley.
