Cream of Chicken and Rice Soup

1 Serving, Counts as: 1 Life Protein, 2 Life Carbs 

6 oz chicken breast, chopped in bite-size pieces
1 tsp finely minced onion
8 oz skim milk
1 packet of LA lite Cream of Chicken Soup Mix
1 cup fresh broccoli florets
1/4 cup raw brown rice
Fresh ground black pepper to taste

1. In a small saucepan sprayed with nonfat cooking spray; saute chicken and onion. 
2. Add milk and the envelope of soup mix into the dutch oven; stir until blended. 
3. Add broccoli and rice; cook until rice is tender. 
4. Season with pepper and serve immediately.
