Scrambled Tofu

4 Servings, Each Counts as: 1 Life Protein, 1 Life Carb, 2 Life Fat

1/2 cup finely chopped onion 
1 lb firm tofu, crumbled
1 tbsp low-sodium soy sauce
1/4 tsp garlic powder
1/4 tsp black pepper 

1. Saute onions in a skillet coated with nonfat cooking spray until tender; next add remaining ingredients. 
2. Cook until tofu starts to brown and heated through. 
3. Serve with toast.
