Spiced Artichoke & Rigatoni

3 Servings, Each Counts as: 1 Life Protein, 5 Life Carbs, 4 Life Fats 

1 Tbsp light margarine
2 garlic cloves, minced
1 cup raw spinach
1/2 cup cooked sliced artichoke hearts
1 cup whole wheat rigatoni
1 Tbsp fat-free Italian dressing
2 Tbsp pine nuts
1 Tbsp Parmesan cheese

1. Melt margarine in a small saucepan. Add garlic and spinach; stir over low heat until spinach is wilted.
2. Add artichokes, pasta, and dressing. Mix well.
3. Sprinkle pine nuts and cheese. Serve immediately.
